If you're trying early in the game such as before the Wasp Attack quest User Info: bymatal. First off, you have been misled. The best time for sacrifice is midnight, regardless of your alignment being good just makes it easier. The arrow pointing up is the time of day. Sunrise is at 6AM, Sunset is at 6PM, so you want to sacrifice when the arrow is pointing into the dead center of night.
This isn't as hard as it sounds. The sacrifice you want is a mercenary, so save your game, hire two of them preferably Twinblades Camp and the Temple of Avo. Cast heal life so that they have full health.
Take them to the Chapel and wait. You will notice that the mercenaries get paid periodically.
Different Sources of Knowledge
This is your key as they get paid at the top of the hour. Count from 6PM to Midnight, and quickly sacrifice the first mercenary. Use Y to skip the cutscenes, and if you don't get the bow sacrifice the second one immediately, again using Y. Should you fail your first time around, load your save as the mercenaries do NOT respawn.
